The Cake

You can't go past a simple chocolate cake or sponge cake.

Our favourite recipe from one of our grandmothers is as follows (the fail safe featherlight sponge)

Ingredients:

-4 eggs

-3/4 cup Caster Suger

-1 Tablespoon Custard Powder

-3/4 cup Corn Flour

-1/2 teaspoon bi-carbonate of soda

-1 teaspoon cream of tartar

Method:

  1. Preheat oven to 160°C (fan-forced). Grease one deep 30cm round cake pan; lightly flour the pan with a little plain flour and shake out excess flour.

2.Separate the eggs

3.Whip the eggs until stiff peaks form

4.Add the caster sugar and mix well

5.Fold in the beaten egg yolks

6.Sift the dry ingrediants

7.Fold in the dry ingredients gently

Bake for 25min (until cake comes away from the edges of the pan).

For a traditional look, the cake can be decorated with whipped cream, strawberries and jam.
